Slow Cooker Vegetable Soup.

Slow Cooker Vegetable Soup – Once Christmas lunch was out of the way I was left with quite a lot of veg sitting in the fridge.

Which I got from Asda who were kindly throwing it into people’s trolleys for free as they left the shop on Christmas eve.

Of course I didn’t want to waste it so I thought it was just another excuse to break out the crock pot and make some soup and what a recipe! And it is healthy!


Honestly it was the nicest soup I have ever had, and all three boys had seconds so it was most definitely a hit!

We had it for lunch with dumplings and then again for lunch the next day (it makes lots) with garlic toast.


Here is what I put in the Soup (I have a big slow cooker)

1 Bag of Carrots 1 Bag of Parsnips 5 Sorry looking potatoes 2 Very Sorry looking Leeks Quarter bag of red lentils 1 Tin of Chickpeas put these in around 40 mins before you serve 2 Small red onions Half a Turnip 1 Tin of Tomato Soup (Trust Me)

All I did was chop the veg into the thickness that I wanted and then I added 4 Veg stock Cubes to some water until the veg is covered.

Cook on Low for 6 Hours Or high for 3 hours or until you have nice soft veg.

Then you can either have chunky soup, or you could blend it which is what I did to get my kids to eat it all (they won’t eat onion,turnip or parsnips if they can see them) (HA)

To make it taste nicer we let ours cook for the 6 hours and left it to cool overnight then reheated it the next day in the slow cooker.


To make Dumplings I just used two dumpling mixes I already had in the store cupboard and then I boiled them in some beef gravy on the hob for 35 minutes.

To make Garlic Toast the easy way, chop up some garlic (or use paste) add to a small pan with a knob of butter mix until its melted.

Toast some nice bread then pour the butter over the toast. (This is delicious if you do it under the grill and add cheese)YUM.
