We have a thing in our house for Greek style food at the minute, with fresh lemon flavours and mint it's just super refreshing. So when Ingram Valley GB sent us a Leg of lamb to try, I just knew I had to do something Greek with it.
My go to is always my trusty slow cooker, you just throw in your ingredients and leave it for hours. Perfect! What works is just go with the ingredients you already have in and it will always turn out to be a tasty meal.
Ingredients
We used leg of lamb but to be honest you could use any meat.
2 tbsp olive oil
5 chopped in half tomatoes
3 carrots sliced
1tsp dried sage
1tsp dried rosemary
1tsp dried thyme
1tsp dried mint
2 lemons, cut in half
Garlic as much as you can handle
Method
Get your slow cooker and pour in the olive oil, tomatoes, carrots, sage, rosemary, thyme and mint. Cut your lemons in half, squeeze the juice into the slow cooker then put the lemons in too. Get your garlic and pop in a few cloves to the mix. Then get your meat and season it with some of the herbs above (especially the mint) YUM. Cut a few holes in the the meat and push in some cloves of garlic. Pop the lid on the slow cooker and let it cook for at least 6 hours on high.
Remove from the slow cooker and let it rest for at 30 mins. We serve with my delicious Greek style potatoes and Greek style salad.
