Katsu Curry is a firm favourite in our house, even the two picky eaters Toby and Elliot love it.
Japanese food is one of my favourites, I find buying takeaways a pain because I know I can make the food cheaper and tastier at home. Yes it is nice to have a takeaway and a break from cooking once in a while, but I enjoy cooking and feeding my family. We had a few breaded chicken breasts in the freezer so I thought I would whiz up a batch of my always wanted Katsu Sauce. We do make our own breaded chicken for this recipe sometimes too.
Katsu curry sauce is a delicious, decadent, nutty & slightly spicy sauce.
Ingredients for the sauce
2 tbsp sunflower oil
2 red onions chopped
1 carrot diced
3 garlic cloves chopped
1 tbsp of curry powder (we use medium)
75g peanut butter
500ml chicken stock
1 tsp Garam Masala
2 red chillies
Spring onions to garnish
Method
Heat the oil in a frying pan, add in the carrot, onion and garlic for a few minutes until softened, then add the curry powder, peanut butter, stock and bring it to a boil. Add the Garam Masala and a few pieces of chilli. Then blend until smooth. Place the cookec chicken on a bed of rice and pur over the sauce. Sprinkle some chillies and spring onions over and enjoy! You can easily double the ingredients and freeze some for next time. Make sure it has completely cooled before you put it in a container and freeze.

Ingredients
5 chicken breasts with skin removed
3 eggs
165g dried breadcrumbs
2 tsp sunflower oil
3 tsp turmeric
2 tsp curry powder
Method
Preheat the oven to gas 6 and line a tray, Crack the eggs into a bowl tip the turmeric, curry powder, breadcrumbs and oil into a seperate bowl. Dip each breast into the egg and then into the breadcrumb mixture, making sure each breast is coated well. Then place onto your tray and bake for 25 minutes. Again you could do these in a large batch and freeze.
