My Healthy Chia Seed Pudding Recipe and 5 reasons why you should be eating it.

I'm not much of a breakfast person, I used to regularly skip breakfast and then feel crap for the rest of the day until my husband got me to eat every breakfast time for the next few weeks and I saw a huge improvement, not only in my mood but in my energy levels.

I don't drink cow's milk, so I usually go to coconut milk or a nut based milk.

One of only a few things that I do enjoy eating for breakfast is a Chia Seed Pudding with fruit.

5 reasons why you should eat Chia seeds

+ They have a huge source of nutritional value with very few calories

+ Packed full of antioxidants

+ Reduce blood sugar

+ Helps reduce joint Inflammation

+ High fibre and protein content

Here is my recipe

You can make your pudding in a larger bowl for you to dip into later or keep for the next morning.

Grab a mason jar or a bowl and add:

4 Tablespoons of Chia Seeds

2 cups of milk (I use coconut milk but you can use any kind.)

1/2 teaspoon vanilla extract (Optional)

1 tablespoon of honey or maple syrup

You need to let it set for around 3 hours but I usually leave it covered up in the fridge overnight.

Then you can add your toppings!

Chopped up fruit, chocolate shavings, nuts, the list is endless.

Now the most important part

ENJOY!
