How to make the best Elderflower Cordial.

I just love Elderflower cordial, it is definitely one of those things that reminds me of Summer. It is just so refreshing and there is just something about using nature to make something so delicious. You will be surprised what you can do with it actually. It is not just a drink.

What you will need:

Around 20-30 Heads of Elderflower ( If you are unsure please check with an identifier)

2 kg of Granulated Sugar

2 litres of water

2 unwaxed Lemons

1 Unwaxed Lime

85g citric acid

Method

 Place the sugar into a pan with the water and then bring to the boil, stirring until the sugar has completely dissolved.

Prepare the Elderflower heads, shake them upside down to make sure you have removed any bugs that may be clinging on and then place into a large bowl. While the sugar syrup is heating,take the lemons and stripe a few long stripes off to place in the bowl with the Elderflower. Slice the lemons add the slices to the bowl. Do the same with the lime. Pour over the boiling syrup, and then stir in the citric acid. Cover with a cloth and then leave at room temperature for 24 hours. No trying it before the 24 hours are up!

After the 24 hours, strain the cordial through a sieve lined with muslin cloth, and pour into sterilised glass or plastic bottles. Screw on the lids and pop into the cupboard ready to use.

Tips

Serve dilute with fizzy water and add mint or dilute with lemonade, add a slice of Lemon and Lime and hey presto you have a Mocktail.

For the Adults try adding it to your favourite spirit.

You can even try adding it to cake mix, Ice lolly molds.
